Beef Roll Up

Serves: 6

6 Beef Cube Steaks
3/4 Cup Fine Chopped Onions
1 Tsp Salt
1/4 Tsp Pepper
3/4 Cup Green Pepper (Chopped)
3/4 Cup Fine Chopped Celery
1 1/2 Cups Shredded Carrots
3/4 Cup Low Calorie French Dressing
12 Slices Bacon
1/4 Cup Water

Sprinkle meat with salt & pepper, marinate in dressing one (1) hour at room temperature. Simmer vegetables in water till tender crisp, (covered, about 7 to 8 minutes). Drain vegetables. Drain steaks and place about 1/3 cup vegetable mixture on each steak. Roll up, wrap two (2) bacon slices around and secure with toothpicks. Grill steaks over hot coals or broil 3 to 4 inches from heat for 20 to 25 minutes, turning steaks occasionally
