Hot & Sour Soup

Serves: About 4 people


1/4 cup cornstarch, plus 1 teaspoon
1/4 cup water
3 oz. pork shoulder or loin
1/2 teaspoon oil
1/4 cup soaked wood ears (dried black flat mushrooms)

1/2 packaged soft tofu
1/4 cup bamboo shoots
2 eggs
1 scallion
8 cups chicken stock
1/2 teaspoon fresh ground white pepper
2 tablespoon dark soy sauce (dark soy is thicker than normal kikkoman style, you might have to get this from an asian market)

1 tablespoon light soy sauce (like kikkoman)
Salt to taste
1/2 teaspoon sesame oil
3 tablespoons white vinegar
1 pinch of sugar

If you like you can also add:
Soaked dried shiitake mushrooms
Diced water chestnuts.

Cook until hot and enjoy!
