Zuppa Toscana




Serves 5

1 Package Jimmy Dean Sausage ( use the spicy one if you like)
5 strips bacon cooked
4 cups water
2 cups chicken stock
1 cup heavy cream
1/2 Onion chopped
1 tbsp Chopped Garlic
1 Cauliflower (broken into small florets)
Chopped Kale (as much as you like)
Salt, Pepper, Pepper Flakes to taste


Brown sausage and bacon and onion then add garlic for 3 or 4 more minutes. Add chicken stock then cream and other ingredients. Simmer until cauliflower is tender.

You can sub 3-5 potatoes for cauliflower. Cauliflower is the low carb / keto version of this recipe. For potatoes you do not have to brown them, just add to the water / chicken stock with bacon and sausage and simmer until tender.
