New England Clam Chowder

Serves: 6

2 Cans Minced Clams
 2 Cups Boiling Water
1/4-1/2 Lb Bacon
2 Cups Milk
1 Onion, Diced
3 Tbsp Butter
3 Potatoes, Diced
4 Tbsp Flour
2 Carrots, Sliced
8 Oz Sliced Mushrooms
2 Ribs Celery, Sliced
Salt & Pepper To Taste

Fry bacon, drain on paper towels. Drain all but a little fat from pan. Add mushrooms and saute for few minutes. Add onion, water, potatoes, celery and carrots; simmer about 20 minutes. Mix flour nto a little of the milk. Add clams, milk, butter and seasonings to potatoes. Simmer gently till thickened.
