Vetetable Beef Rigatoni

Serves: 6 - 8

1 Lb Ground Beef
1 Tsp Oregano
2 Garlic Cloves, Minced
1/2 Tsp Oregano
1 Large Onion, Chopped
8 Oz. Fresh Mushrooms, Sliced
4 Diced Tomatoes
16 Oz. Package Rigatoni
12 Oz. Can Tomato Paste
3 Medium Carrots, Sliced
1 Tbsp Sugar
1 1/2 Cups Grean Beans
2 1/2 Tsp Salt
3 Medium Zucchini, Sliced
1/4 Tsp Pepper
1 Green Pepper, Chopped

Brown beef, onion and garlic. Drain off fat. Stir in tomatoes, tomato paste, mushrooms and spices. Heat to boiling, reduce heat and simmer uncovered for thirty (30) minutes. In large pan heat to boiling one (1) inch water. Add beans and carrots. Cover and cook for five (5) minutes over low heat. Add zucchini and green pepper, cook five (5) minutes longer. Drain and add to sauce and simmer. Meanwhile, cook noodles according to box directions. Spoon vegetable sauce over rigatoni.
