China Chicken




Serves 4

1/4 Cup Light Or Dark Corn Syrup
3 Tbsp Corn Oil
2 Tbsp Dry Sherry
2 Cups Brocolli Flowerets
1 Tbsp Soy Sauce
1 Medium Yam Peeled, Thinly Sliced, (Cut In Quarters)
1 Tsp Ground Ginger
1 Clove Garlic, Minced
1 Tbsp Corn Starch
1/4 Tsp Hot Pepper Sauce
1/2 Cup Water
2 Whole Chicken Breasts, Skinned, (Boned, Cut In 1/4 In. Strips)
1/2 Cup Chopped Walnuts

In bowl stir together first six (6) ingredients. Add chicken. Marinate 30 minutes. Remove chicken; reserve marinade. In large skillet or wok heat corn oil over medium high heat. Add brocolli; stir fry 1 to 2 minutes or until tender crisp. Remove from skillet. Add yams; stir fry 1 to 2 minutes or until tender crisp. Remove. Add chicken; stir fry 1 to 2 minutes or until white.

Return broccoli and yams to skillet. Stir in reserve marinade. Mix corn starch and water until smooth. Stir into skillet. Stirring constantly, bring to a boil over medium heat and boil one (1) minute. Stir in nuts.
