Chili - Vegetarian with Carroll Shelby's




Serves: 4 - 6

2 tablespoons olive oil
2 small onions, chopped
2 large carrots, peeled and chopped
2 large celery ribs, chopped
2 Tbsp chopped garlic

2 Cans dices tomatoes, drained
2 Cans Kidney beans, drained & rinsed
2 Cans Black beans, drained & rinsed
2 Bottles of good quality beer
1 Carroll Shelby's Chili Kit (Use spice & cayenne packets only)
Sour Cream
Shredded Cheese


Heat a large, heavy pot over medium heat add oil. When oil is hot, add garlic, onion, carrots, and celery. Add some salt and pepper to taste. Cook until vegetables have softened, 5 to 7 minutes.

Add beer, beans, tomatoes and the Carroll Shelby's spice packets (you may reduce the amount of cayenne) and reduce heat to simmer for 2 hours.

Add sour cream and/or shredded cheese to each bowl and enjoy.
