Chicken Stroganoff

Serves: 4

2 Whole Chicken Breasts, Boned And Skinned
8 Oz Fresh Sliced Mushrooms
1/2 Tsp Salt
3 Tbsp Butter
1/2 Cup Sour Cream
1 Can Cream Of Mushroom Soup
3 Tbsp Chopped Scallions

Cut each breast in half; then cut each half into 10 or 12 strips. Melt butter in hot skillet. Add chicken, scallions and mushrooms. Sprinkle with salt. Cook 6 minutes, stir occasionally. Add soup and 1/3 cup water. Heat to boiling, stirring till mixture is smooth. Reduce heat to simmer, blend in sour cream and heat but do not boil. Serve over hot noodles or rice.
