Chicken Pot-Au-Feu




Serves: 4

To Cook Chicken:
1 Chicken And Giblets
1 Carrot
1 Quart Water
2 Env. Instant Chicken Broth
1 Onion Sliced
3 Sprigs Parsley
2 Ribs Celery
1 Tsp Salt

Put all ingredients in pressure cooker, cook at ten (10) lbs for thirty (30) minutes. Strain broth, discard vegetables. When the chicken cools, skin, bone and cut into bite sized pieces. Skim as much fat as possible from broth.

Pot-Au-Feu:
8 Small Onions
1 Small Cabbage (In Eights)
2 Ribs Celery, Sliced
4 Carrots, Pared, Sliced
1 Tbsp Butter
1 Cup Frozen Peas

Heat broth in soup pot. Add cabbage and onions; boil for 20 minutes. Add carrots and celery; boil for 10 minutes. Add peas, chicken and butter. Cook for five (5) minutes longer.
