Chicken Clam Supreme




Serves: 4-6

1 Chicken , Cooked, Skinned, Boned And Cut Up
3 Cups Chicken Broth
1/3 Cup Flour
1 Lb Carrots, In Matchstick Strips
10 Ozs Pkg Baby Lima Beans
3 Medium Potatoes, Diced
3 Cans Minced Clams
2 Bunches Scallions, Thin Slice (Reserve 1/4 For Garnish)
1 Tsp Salt
1/4 Tsp Pepper
1/3 Cup Butter
Sauterne Or Dry Table Wine

Cook carrots in chicken broth till tender, 3-4 minutes. Remove to bowl reserving 3/4 cup for garnish. In broth heat potatoes and beans to boil-then simmer till tender, 5 minutes. Remove to bowl with carrots. Add wine to broth to make 2 1/2 cups. Drain clams, reserve broth. Melt butter, cookonio onion. Stir in flour, salt and pepper. Add chicken and clam broth, stir until sauce thickens. Add vegetables, chicken and clams. Heat. Serve
