Spinach Lasagna




 

Serves: 4

 

1 Pkg Frozen Chopped Spinach

1/4 Cup Dry Bread Crumbs

1 Lb. Ground Beef

1 Cup Creamed Cottage Cheese

2 Tbsp Instant Minced Onion

1/8 Tsp Pepper

1/8 Tsp Garlic Powder

1 Cup Shredded Mozzarella Cheese

1 Can 15 1/2 Oz. Spaghetti Sauce

2 Tbsp Parmesan Cheese

 

Micro spinach at high 3-4 minutes in package until defrosted. Drain throughly and set aside. Crumble ground beef into two (2) quart casserole. Add minced onion and garlic powder to beef. Micro at high 4-6 minutes or until beef is no longer pink. Drain. Stir in spaghetti sauce. Cover and micro at high 2-4 minutes or till hot and bubbly, stirring after half the time. Mix in 2 tbsp bread crumbs. Combine spinach, cottage cheese, egg, pepper and remaining bread crumbs. Spread half the meat mixture in 9 x 9 dish. Cover with mozzarella. Top with remaining meat; sprinkle with parmesan. Micro at high for three (3) min. Reduce power to 50%and micro 7-10 minutes or until throughly heated. Let stand for three (3) minutes before cutting.
