Stuffed Shell Macaroni




 

Serves: 6 To 8

 

Sauce:

2 Tbsp Vegetable Oil

1/4 Cup Minced Onion

1 Clove Garlic, Minced

16 Oz Tomato Sauce

1/2 Tsp Salt - Dash Pepper

1 Tsp Sugar

1/2 Tsp Basil Leaves

1/2 Tsp Oregano

 

Heat oil and cook onion and garlic for 3 or 4 minutes. Add remaining ingredients and simmer for ten (10) minutes.

 

Filling:

2 8 Oz Pkg Cream Cheese

2 Eggs

16 Oz Mozzarella, Shredded

2 Tbsp Chopped Parsley

1/2 Tsp Salt - Dash Pepper

2 Tbsp Grated Parmesan

12 Oz Pkg Jumbo Shell Macaroni (Cooked & Drained)

 

Beat cream sheese and egg until smoothe, stir in remaining ingredients except for parmesan. Stuff each shell with one (1) tbls cheese mixture. Spoon 1/2 cup sauce in 13 x 9 pan. Arrange shells in one layer and drizzle remaining sauce over the shells. Sprinkle with parmesan. Bake 20 to 25 minutes at 350 deg.
