Scalloped Sweet Potatoes & Apples




 

Serves: 6

 

 Medium Potatoes

1/2 Cup Apple Cider

Boiling Water

1/4 Tsp Salt

1/2 Cup Butter

1/8 Tsp Cinnamon

3/4 Cup Brown Sugar

1 Large Apple, Pared & Sliced

 

Scrub potatoes, cover in pan with boiling water; bring back to boil. Reduce heat and simmer for 25 minutes. Drain, let cool. Peal and cut in 1/4 inch slices. Melt butter in small skillet. Add brown sugar, cider,, cinnamon and salt; bring to boil, then simmer ten (10) minutes, stirring occasionaly. Arrange in casserole, alternate potato and apple slices. Spoon half of syrup over slices. Bake covered for 25 min. Remove cover and baste with remaining syrup. Bake uncovered for 20 minutes or until glased.
