Sour Cream Coffee Cake




 

1 Cup Butter

2 Cups Sugar

2 Eggs

1 Cup Sour Cream

1 1/2 Tsp Vanilla

2 Cups Sifted Flour

1/4 Tsp Salt

1 Tsp Baking Powder

1/2 Cup Pecans, Chopped

1/4 Cup Brown Sugar

1 Tsp Cinnamon

 

Beat together butter, sugar, eggs, sour cream and vanilla. Add flour, salt and baking powder. Pour 1/3 of batter in a greased and floured bundt pan. Mix pecans brown sugar and cinnamon. Sprinkle half of topping on top of batter. Add another third of batter and remainder of topping, then the rest of the batter.

Bake and cool for fifteen (15) minutes then turn onto plate. Can be glazed with a mixture of: 1/4 cup melted butter, 1 cup confectioners sugar, 3/4 tsp vanilla and 1 to 2 tbsp hot water. Blend ingredients, add only a little water at a time to reach desired consistency. Bake at 350 deg. For one (1) hour.
