Carrot Cake




 

4 Eggs

1 1/2 Cups Wesson Oil

3 Cups Carrots, Shredded

2 Cups Flour

2 Cups Sugar

2 Tsp Baking Soda

2 Tsp Cinnamon

1 Tsp Salt

 

Mix together eggs, oil and crrots. Add remaining ingredients to carrot mixture, mix well. Pour into greased and floured cake pan. Bake at 350 deg for one (1) hour. Cool.

 

Icing: 8 Oz Cream Cheese, Soft

1/2 Cup Butter

1/2 To 3/4 Box Confectioners Sugar

2 Tsp Vanilla

1/2 Cup Chopped Nuts (Optional)

 

Beat together all ingredients till smooth. Frost cake.
